I was wondering how many of you are gluten free either by choice or have to be? I guess it really does not matter thing is wouldn’t it be nice to make a great cake for your mom (or for someone you look up to as a mom) that you can share with her?
Sooo, if you were unable to order your gluten-free cheesecake to share here is a great recipe for one of the best Angel Food Cake I have ever had! It’s very easy to make with two minor changes (1) use Cup 4 Cup gluten free flour, I have found it is one of the best to use for baking (2) when baking don’t over mix and most important once you have mixed all the ingredients together always, always let the dough rest for at least 30 minutes.
Now go make a yummy Angel Food Cake to share! I’m sharing this amazing recipe because you know Mama, always told me to share!
Oh yes, I made it see the pic below, I also made the strawberries (mashed them all by myself!), and the whip cream all with love of course!

Spring is in the air and of course that means it’s time to clean-up and to create new or freshen it up a bit. Mama wants to make sure that this blog is kept up to date and is always filled with information!
You may or may not have heard that Mama Cheesecake was out in Malibu for a month. At their Farmers Market on Sundays, it was so cool to meet new peeps and to get some great ideas and information.
One of the things Mama heard over and over again was “I really would like to a soy free as well as nut free cheesecake can you make?” The other was can you make a sugar free cheesecake?
Here is the reply…
Mama is on a hunt to find a way to make the one ingredient that carries soy out of our vegan cheesecake. She is onto something this very moment! She is in the kitchen trying out two different ways one using a Greek style yogurt in the place of sour cream (vegan of course) or if need be making her own sour cream. Finding a recipe she likes for a great sour cream that does not have nuts or soy in it is a challenge but one she does not mind taking on!
She is currently looking for this brand!
As for the sugar free cheesecake this is an important style to figure out there has been many recipes she has tried but none of them seem to be good enough for her seal of approval. So she is busy creating her own recipe using bits and pieces she has learned along the way and from other recipes. In fact Mama is hoping to have something to share with all the peeps who need a sugar free cheesecake by Summer 2017! So lets hope all goes well in the test kitchen in fact who knows maybe, just maybe a new style will emerge before this Summer!
For those of you who don’t know Mama’s cream cheese that is used in her vegan cheesecake is all handcrafted! It does not contain Soy, Nuts and of course Diary. And, it is pretty darn good if I may say so my self!
When starting this business I had to start from scratch. From what my overall vision would be, all the way to packaging. With such a huge undertaking I knew I could not do it alone. I turned to my business coach and a small selected group of close individuals who have always been supportive. I also included my two kids. After all, the cheesecakes were originally created to help me raise funds in order to allow them to participate in extracurricular school activities. They both always felt I should have been in this business many years ago, and so they were thrilled when I finally took on this venture.
The name was especially important to me. It had to really feel right. Many names were tossed out but Mama Cheesecake kept coming up. Honestly, I wasn’t sure about it at first. Then one day while driving home I thought about my grandmother. In that moment I thought, “OMG it’s Mama”! I suddenly remembered as children and even into adulthood, we all referred to her as Mama. At that very moment I smiled and thought, yes it has to be Mama Cheesecake. Now that the name was settled, it was time for the marketing research to begin. So I hit the ground running and never looked back.
I had only been operating Mama Cheesecake for a year when I was chosen to take part in the Restart Project. Hosted by Gweneth Paltrow and Tracy Anderson and produced by Ryan Seacrest Productions, this show highlighted women, much like myself, who overcame all types of challenges in their own lives. The online video series (which is highlighted in the post below) allowed me to share a little bit more about my history and start of Mama Cheesecake. Juggling two kids on my own and working another full time job to fund what really mattered to me wasn’t always the smoothest road to manage. You know what they say, “sometimes you have to fall to get back up”. And boy, fall I did. Several times in fact. But I knew that each time I got back on my feet I would be faster and stronger then ever. And I was. I realized that no matter what my past circumstances were, feeling sorry for myself was no longer an option. Instead, I decided to not only get back up, but to fly. It was because of this new found confidence in myself that I did not mind sharing what happened to me back in 2006-2007 with the show. I actually felt honored to be selected to be a participant with the Restart Project. This gave me a platform to share my story in the hopes that it would reach someone out there who could gain something from it. I know it get’s so unbearably hard sometimes. I know how alone and weak fear can make you. I remember how it feels to think you’ll never get out of the dark. But I did, and so will you. Always walk with your head held high- no matter how badly you feel you have messed up. You are taking on a fight that most people are afraid of, and that is to be respected. Be honest- to yourself and everyone around you or you can’t really get to the bottom of the problem. Last but not least, always be loving and forgiving. You will make mistakes, but your path will be found as long as you don’t give up! When you finally get to that clearing and see all that you have overcome it will make the outcome sweeter than you have ever imagined.
It is my hope that this video will help you to see a little of yourself in my story and that it will help give you a little nudge to take the next step to go out there and make things happen for yourself. We all make mistakes, we all run into issues, we all have our own stories. Some we are proud of, and some we are not so proud of, but nevertheless, all these pieces make up who we are. I am very fortunate to say all my puzzle pieces have finally come together and I am excited to say that my story is headed straight for it’s own delicious happy ending.

It’s time to rollout Mama’s Blog and this is only the second month into the new year. Which means the entire year is in front of us to create what we are looking for!
Hopefully you will find that our different post are interesting enough to keep you coming back for more. You can learn how Mama Cheesecake started or hear about some of our baking processes. As well as other information about our flavors and specials that are happening. We will also try to have information here that may be of help to you in your own kitchen.
When we can, we will give you a little look behind the scenes, that will give you a peek at how we create our decadent cheesecakes (like the one below). You just never know what each new post will be about. So keep an eye out or better yet fill out the information to the right so we can add you to our mailing list!
